McWilliams, Margaret (2001). Foods: Experimental Perspectives, 4th Edition. Prentice Hall. ISBN 978-0-13-021282-5. Although you can find smaller amounts of fructose in fruits and fruit juices, it is also one of the main components of high fructose corn syrup. High fructose corn syrup, while a completely different product from fructose powder, can cause its own share of health complications due to the highly processed nature of the product. Fructose in its natural form, like powdered fructose, doesn't pose nearly the same threat. Manufacturers create high fructose corn syrup by adding certain enzymes to corn starch, which is essentially pure glucose, another type of sugar. They then use this glucose to create a syrup that contains varying amounts of fructose. Impair the composition of your blood lipids. Fructose may raise the levels of VLDL cholesterol, leading to fat accumulation around the organs and potentially heart disease ( 5, 6).

It’s also found in various sugary sweeteners like high-fructose corn syrup and agave syrup. If a product lists added sugar as one of its main ingredients, you can be pretty sure it’s high in fructose. The American Heart Association recommends no more than 5 tsps of added sugar for women, and 9 tsps for men. We not only get fructose from HFCS, but from sucrose (table sugar). Sucrose is a disaccharide (two sugars) made up of glucose + fructose. HFCS and sucrose are found in processed foods including sweets, soft drinks, and nearly every “edible food-like substance” found in a bag and/or box. Apple and pear juices are of particular interest to pediatricians because the high concentrations of free fructose in these juices can cause diarrhea in children. The cells ( enterocytes) that line children's small intestines have less affinity for fructose absorption than for glucose and sucrose. [33] Unabsorbed fructose creates higher osmolarity in the small intestine, which draws water into the gastrointestinal tract, resulting in osmotic diarrhea. This phenomenon is discussed in greater detail in the Health Effects section. For decades, scientists believed that the body was limited to processing a maximum of one gram of carbohydrate (more specifically glucose) per minute, or 60g per hour. However, further studies on humans are necessary to confirm the effects of fructose on cancer. Contrasting evidenceAlthough it’s not a serious condition, intolerance can cause discomfort. While there’s no definitive cure for it, symptoms can be managed with a low-fructose diet. The Bottom Line

However, the evidence is still there, and more studies will paint a clearer picture in the coming years and decades. Summary Fructose was found to increase triglycerides in type-2 but not type-1 diabetes and moderate use of it has previously been considered acceptable as a sweetener for diabetics, [59] possibly because it does not trigger the production of insulin by pancreatic β cells. [60] For a 50 gram reference amount, fructose has a glycemic index of 23, compared with 100 for glucose and 60 for sucrose. [61] Fructose is also 73% sweeter than sucrose at room temperature, allowing diabetics to use less of it per serving. Fructose consumed before a meal may reduce the glycemic response of the meal. [62] Fructose-sweetened food and beverage products cause less of a rise in blood glucose levels than do those manufactured with either sucrose or glucose. A number of studies have been done on these sweeteners, with varying results. Some say they are harmless, while others say they should be completely avoided.
