I used the Galaxy Caramel Buttons to decorate the top purely because I saw them in the shop and they looked yummy, but if you can't find them then use pieces of Galaxy Caramel chocolate bar instead. This produces a really light and beautiful texture.

I know I say this a lot but this is honestly one of my favourite recipes to date. I really enjoy making blondies especially my Jammie Dodger and Biscoff ones but there's something extra special about the blondie recipe I'm sharing with you today. Instead of chopping up pieces of chocolate and folding it through the blondie batter, I added an entire layer of Galaxy Caramel to the centre and oh my God, it worked so amazingly well! I transferred half of the blondie batter into a 20cm square tin, then added two whole bars of Galaxy Caramel on top.

I think I prefer Galaxy chocolate over Cadbury chocolate. Galaxy is nice and creamy and the caramel inside this bar makes it even more amazing. In my county, we have the Dove Caramel, which is quite alike these Galaxy bars, but still, I would prefer the Galaxy version every time. The gooey caramel that is inside which makes the bite even more creamy than the chocolate itself.

To make the base, use a food processor to whizz up the biscuits into crumbs. Mix in melted butter and press the mixture into the bottom of a 23cm springform tin. Put it in the fridge for 30 minutes to set. The cheesecake should be stored in the fridge and will last for 3-4 days. You can freeze the undecorated cheesecake, however you do need to let it set in the fridge first. Setting it in the freezer will affect the texture and it won't be as nice. Once it's set in the fridge, you can remove it from the tin and put the cheesecake in a box or tupperware. You could also slice it up, and freeze in portions. Then you can easily defrost a few slices at a time depending on when you'd like some cheesecake! How do you remove a no bake cheesecake from the tin?
