It is the gripping malty characteristic that lingers most as the fruit (that green apple and hint of pineapple) and confected sweetness fade rapidly. This has the effect of bringing the white pepper and warming spices to the fore. On the palate this whiskey has the same freshness and sweetness as seen on the nose. Crisp and tart green apple notes mingle with a hefty pinch of white pepper and a good dollop of honey. This honey-like note becomes more pronounced with time and heads more in the direction of honeycomb and golden syrup as it does so. These are then joined by further sweet notes such as milk chocolate, toffee and a hint of caramelised pineapple.

One such new whiskey is Grace O'Malley Blended Irish Whiskey. Grace O'Malley is a newer brand that has old roots. The distillate comes from Great Northern Distillery in Dundalk, which is owned and operated by John Teeling, the founder of the Cooley Distillery. Great Northern is the second-largest grain distillery in Ireland. Unless mandatory applicable law provides otherwise, your use of and membership to the Service are exclusively governed by Dutch law. Now Grace lends her name to a new Irish whiskey brand, a blend of triple and double distilled single malt (malt is 46% of the blend) plus grain whiskeys, all of ages ranging from 3 to 10 years old. Barrel aging is done in a combination of ex-bourbon, French oak, and rum casks. That’s quite a blend indeed! Let’s give it a try. The whiskey has a deep golden colour and the nose has an instant freshness and sweetness to it. Aromas of green apple, heather honey and milk chocolate are followed by those of toffee, caramel and vanilla. Underneath are further aromas of malted cereal biscuit and hints of cinnamon and toasted hazelnut. My demands were simple – release my captured sons, namely Tibbot the Mac William. Pay me a pension. And, last but not least, call off her dog Bingham. This was all in Latin, of course. She didn’t have any Irish and I sure as hellfire wasn’t going to speak English. Could have been in French or Spanish, but Latin just seemed more fitting, somehow. With a bottle of whiskey and the will to sort the mess out, we thrashed it out.
